Cottage Cheese Frittata

INGREDIENTS
1/2 pound reduced sodium turkey sausage
8 eggs
1/2 cup low-fat cottage cheese (lactose reduced)
1/2 cup parmesan cheese, grated
1 cup baby spinach, chopped
1/2 teaspoon salt
1/2 teaspoon ground black pepper
DIRECTIONS
Preheat oven to 350 degrees
Lightly spray a 10” skillet with cooking spray
In a medium bowl, whisk eggs, cottage cheese, parmesan, spinach, salt, and pepper. Set aside
Add sausage to skillet and break up into small pieces - cook about 5 minutes
Add egg mixture into the skillet
Move pan to the oven and bake about 16-18 minutes until the eggs have set
Remove from oven and slide frittata out on a cutting board. Cut into 4 pieces
