High Protein Chicken Kale Pasta Bowl

INGREDIENTS
4 ounces Chickpea Rotini
1 Tablespoon Extra Virgin Olive Oil
1 1/4 pounds boneless skinless chicken breast, raw
4 cloves garlic, minced
1/2 yellow onion, chopped
1 red bell pepper, chopped
2 quarts curly kale, chopped
1/4 cup water
1 Tablespoon Italian Seasoning
1 1/2 teaspoons red pepper flakes
1 Tablespoon Extra Virgin Olive Oil
DIRECTIONS
Cook the pasta according to the package directions. Reserve 1/2 cup cooking water for later. Drain pasta and set aside.
Heat the oil in a large pan over medium heat. Chop chicken into bite-sized pieces. Add the chicken and cook for 5-7 minutes or until cooked through. Season with salt and pepper and stir as it cooks. Transfer the chicken to a bowl and set aside.
To the same skillet, saute the garlic, onions, and bell peppers. Cook for about 5 minutes until softened on medium-low heat.
Add the kale and reserved pasta water. Cook the kale until soft, about 2 minutes, stirring frequently. Return the chicken to the skillet.
Add the pasta to the skillet and stir to combine. Drizzle 1 Tablespoon olive oil on top, if desired. Divide onto plates and season with red pepper flakes on top. Enjoy!
*Optional seasonings: Lemon zest or 1.5 Tablespoons lemon juice provides an additional pop! Black pepper and/or additional red pepper flakes for some spice.
