Rotisserie Chicken Salad

INGREDIENTS

4 cups Romaine lettuce

1/2 cup cucumber, chopped

1 tomato, chopped

1/2 cup corn kernels

1/2 cup carrots, shredded

1/2 cup black beans

8 ounces rotisserie chicken, chopped

2 Tablespoons walnuts, chopped (or any nut)

2 eggs, cooked and sliced

1/4 cup Bolthouse Farm’s Classic Ranch Refrigerated Yogurt Salad Dressing, 22fl oz bottle

 

DIRECTIONS

  1. Combine all ingredients except egg in a large bowl and mix until well combined

  2. Top with egg slices

  3. May substitute with your favorite dressing
