Turkey Pesto Zucchini Skillet

INGREDIENTS

1 yellow onion, diced

1 pound 99% Lean Raised without Antibiotics Ground Turkey Breast, 16oz tray (or substitute with raw chopped chicken breast)

2 zucchinis, chopped

1/4 cup fresh basil, chopped

1 Tablespoon Italian seasoning

1 cup cherry tomatoes, halved

1/2 cup pesto

1/4 cup parmesan cheese, grated

 

DIRECTIONS

  1. Spray non-stick cooking spray and sauté onions for 3-4 minutes until softened over medium heat

  2. Add ground turkey and break up with a spoon. Cook until it is no longer pink (about 5-7 minutes). Season with pepper

  3. Add zucchini, basil, Italian seasoning, cook for another 3-4 minutes while stirring

  4. Remove from heat and stir in tomatoes, pesto, and parmesan cheese

  5. Add salt to taste, if needed

  6. To add carbohydrates: Serve with noodles or rice or roasted potatoes (each 1/2 cup = 120-150 calories and 15-20g carbohydrates)

  7. For a low carb option add on top of zucchini noodles or cauliflower rice

  8. May substitute cherry tomatoes with canned diced tomatoes or bell peppers
